Hi Lynne,
My cookbook is based on natural flours such as spelt, kamut,etc but most importantly, the sugars that I use are all natural and will not give you the pain, weight gain, yeast overgrowth of processed sugars and sugar substitutes such as splenda, equal etc. These substitutes are worse for you because of the aspertame content. Aspertame in fibromyalgia equals intense pain, bloating and weight gain. I use xylitol to bake, changing out processed sugars one for one. You can use Stevia. It is much more intense and concentrated. After teaching classes for five years, the jury is in that they all prefer the xylitol. If you would like to talk anytime, please feel free to call me.
